Healthy Cauliflower Zucchini Hash Browns

To continue the breakfast theme, these are the best healthy hash browns I’ve ever tried.

It’s a wonderful way to sneak cauliflower and zucchini into picky eaters' food!

1 small zucchini
1 cauliflower
1 organic egg
75g grated parmesan cheese
¼ cups of flax seeds
¼ cup brown rice flour
A bit of garlic
2 tablespoons of dill 
A pinch of salt

Cook the cauliflower lightly in a pot, be careful to not overcook.

In a food processor grade fresh zucchini, the lightly cooked cauliflower, parmesan cheese, garlic and dill.

In a separate bowl whisk the egg with flour, flax seeds, salt and pepper.

Gently fold the egg mixture into the vegie/cheese  mix. I like to let it stand for 15 min to let the flax and the flour absorb the liquid from the veggies.

Form the mixture into uniform balls that can be either fried in coconut oil or baked at 420° for 20 min. Both taste delicious!
